Quick Pita Pizza

How about a light, delicious meal in a hurry? Fire up your oven, grab some pitas and you’re ready to start! Lay out the pita bread on a cookie sheet and toast until it’s just crispy but not browned. You can slice them so that each pita loaf makes two crusts, or for a heartier crust, you can simply toast the whole pita. When they’re crispy, take them out of the oven and add some pasta sauce. Top with your choice of veggies and vegan cheese, and bake again until the veggies are fork tender.

Toast in the oven at 400 degrees:

6 whole wheat pitas

 

Top each pita with:

Pasta sauce

Your choice of vegetables: kale, broccoli, olives, green onions, bell peppers, grape tomatoes

Sue’s cheesy sauce (see recipe)

Vegan cheese shreds (optional)

 

Bake again until vegetables are tender and cheese shreds are melted. Enjoy!
